It is a food additive based on a pure carrageenan, standardized to provide a uniform gel strength in water. Carrageenan (E 407) is a natural hydrocolloid extracted from red algae. It gels at 48 ºC and, once gelled, withstands temperatures up to 70 ºC. Transparent and firm. The gelling capacity is reduced in acid media.
