Agar agar is a natural texturizing agent used as a gelling agent.
Thermoreversible gel at 92°C.
It produces a firm, transparent, brittle gel that is unstable in the presence of alcohol and in acidic environments.
Not stable to freezing/thawing, does not regain structure after mixing.
Agar-agar is used for various applications such as: jelly inserts, fillings, mousse, hot jelly for catering, etc.
