Ascorbic acid is an antioxidant that limits oxidation, particularly of fats. It thus helps preserve the taste and color of the finished product. It is often used in fruit preparations and juices.
Used as a flour corrector, it reinforces the gluten network.
Ascorbic acid can be used in dietary products (infant foods, energy-reduced foods, etc.) as well as pharmaceutical preparations. For adults, vitamin C requirements are around 60 mg per day. The product can be used in poly-vitamin preparations to meet specific dietary requirements.
